Oil is one of the most famous and typical products of Umbria: in the Green Heart of Italy, we boast a vast tradition that brings on the Italian tables that quality and that taste capable of reflecting all the secrets of the oil art.
To fully comprehend Umbrian oil, it is not enough to taste it but you have to live it: at Castellaro you will have the opportunity to have a complete experience to discover the yellow gold.
We have a farm that produces a small but surely important amount of oil.
A blend that is created by three brothers in the family. The result is three different cultivars (Frantoio, Moraiolo and Leccino), in an oil mill that grinds merely three tons per hour: it is Oil 333, with a slightly spicy, but balanced flavour.
With us you can experience closely the entire supply chain of this production: depending on the period in which you come to visit us we will let you participate in one of the different phases of that fascinating process that leads from the olive to the bottle.
In February – March there is pruning, in summer we explain the olive plant, at the end of the beautiful season, it’s time to harvest and then arrive in the autumn with the tastiest part of all, samplings and tastings
